In ancient India, it is mentioned in the Ayurvedic scriptures, and the Romans called it “ientaculum.” We call it breakfast, and it has been touted as the most important meal of the day. John Harvey Kellogg, MD, put a modern twist on it by promoting grains as a breakfast staple, and we now have ample scientific proof that all were correct: breakfast is the most important meal of the day.

Despite this ancient knowledge, up to 25% of people still skip breakfast altogether, and those who eat it frequently choose the traditional meat-and-eggs type of fare. While eating any type of breakfast is better than skipping it altogether, amplifying its health benefits can be done in a way that is easy to prepare, cheap, good for us — and for the planet.

Do Not Skip It…

Ask most people to judge the healthiness of a meal, and they will look at things like the calories or cholesterol it contains. Unfortunately, that is only half the truth.
